An Austin Adventure and Green Smoothie Recipe

I hope you all had a wonderful Easter Holiday Weekend! I had LASIK surgery last Thursday and was out pretty much until Friday afternoon, when my husband decided it was time for an adventure! We never like to stay in one place for too long…

So off to Austin we went, for a wonderful weekend full of great food, even better live music and some much needed down time! Austin is a magical city full of beautiful art and eclectic real estate. Everyone is friendly and down to Earth, as well. Even Leo had a blast at Zilker Park!

During our trip, we discovered a new favorite place, Juiceland! If you are ever in the area, you HAVE TO GO! Get the Ninja Bachelor, it’s a best seller. I am currently trying in vain to recreate the delicious drink at home. It’s seriously life changing. I’m trying to add more juice into my diet on a weekly basis to up my green intake. Once I have mastered the recipe, I will share it here.

For now, I’m still doing smoothies in the morning and noticing good results. My skin is clearing up and I’m feeling more energetic! I want to share my latest creation with you, especially if you aren’t into eating vegetables first thing in the morning. I promise you won’t notice them!

The Emerald 

1 bunch organic Spinach (1-2 cups)

4 organic Strawberries

1/4 cup Pineapple

2 Kiwis

1/4 cup Avocado

1 cup Coconut Water

1/4 cup Almond Milk

2 tablespoons Raw Hemp Seed

1 teaspoon Bee Pollen

1 teaspoon Maca Powder

optional: 1 teaspoon Spirulina

Directions: Blend everything until smooth, add up to 1/2 cup water to thin the smoothie out to your desired consistency. Enjoy!
